Since its founding in 1989, Le Petit Mas has evolved from a small, diversified market-garden farm to an agricultural enterprise specializing in organic garlic cultivation and the processing of garlic and garlic flowers. Le Petit Mas has developed a lacto-fermentation process for garlic flowers that is unique in Quebec (and the world!). Fermented garlic flowers are currently available in over 800 outlets across Quebec and Canada, as well as in the HRI network. Renowned chefs such as Jérôme Ferrer, Danny Saint-Pierre and Kévin Bélisle use fermented garlic flowers in their cooking, as do La Piazzetta restaurants. Le Petit Mas has expanded its range of processed products to include: organic black garlic, garlic flower oil, dehydrated garlic in powder or pieces, and dehydrated garlic flowers in powder or pieces. Le Petit Mas markets over 60 tonnes of organic garlic every year. The company is currently one of Quebec's leading suppliers of garlic to IGA and Avril supermarché santé.
